Crunchy cereal bits and homemade caramel fill this Caramel-Apple Jacks Bundt Cake with rich flavor.
Caramel-Apple Jacks Bundt Cake

Ingredients
- 3 cups apple-flavored cereal, such as Apple Jacks
- 11⁄4 cups unsalted butter, softened
- 1 cup sugar
- 1⁄2 cup firmly packed dark brown sugar
- 6 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ground allspice
- 1⁄2 teaspoon ground nutmeg
- 1⁄2 cup sour cream
- Caramel Sauce (recipe follows)
- Garnish: Apple Jacks
Instructions
- Preheat oven to 350°. Spray a 15-cup Bundt pan with nonstick baking spray with flour. Set aside.
- In the work bowl of a food processor, pulse cereal until finely ground. Set aside.
- In a large bowl, beat butter and sugars at medium speed with an electric mixer until fluffy, 3 to 4 minutes, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
- In a medium bowl, stir together flour, ground cereal, salt, baking powder, cinnamon, allspice, and nutmeg. With mixer on low speed, add flour mixture to butter mixture in thirds, alternating with sour cream, beginning and ending with flour mixture. Beat until combined. Spread batter evenly in prepared pan. Bake until a wooden pick inserted near center comes out clean, approximately 1 hour.
- Let cool in pan 15 minutes. Remove from pan, and let cool on a wire rack.
- Place cake on serving plate. Drizzle with Caramel Sauce; garnish with Apple Jacks, if desired.

Ingredients
- 1⁄2 cup firmly packed dark brown sugar
- 1⁄3 cup heavy whipping cream
- 1⁄3 cup unsalted butter, cubed
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon ground cinnamon
Instructions
- In small saucepan over medium-high heat, stir together sugar, cream, butter, salt, and cinnamon until smooth and mixture comes to a boil. Cook, stirring frequently, until thickened, approximately 5 minutes.
