Carrot Cake Overnight Oats
 
Makes 4 servings
Ingredients
  • 2 cups old-fashioned oats
  • 3 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon allspice
  • 2 cups oat milk
  • ½ cup Greek yogurt
  • ¼ cup sorghum syrup
  • 2 teaspoons vanilla extract
  • ¾ cup shredded carrot
  • ½ cup chopped toasted pecans
  • ½ cup golden raisins
  • Garnish: chopped pecans
Instructions
  1. In a large bowl, stir together oats, chia seeds, cinnamon, salt, and allspice.
  2. In a medium bowl, whisk together milk, yogurt, sorghum, and vanilla. Add milk mixture to oats mixture, stirring until well combined. Fold in carrot, pecans, and raisins. Spoon mixture evenly into 4 (8- to 10-ounce) jars. Cover and refrigerate for 8 hours or overnight. Garnish with pecans, if desired.
Notes
Kitchen Tip
This recipe is super versatile. To make it dairy-free, you can use a nondairy yogurt. And if you want to use a different type of milk, you can use any milk or milk alternative you choose, such as whole milk, almond milk, or soy milk.
