Brenda Gantt's Neighbor Soup
 
Makes about 8 servings
Ingredients
  • 1 whole chicken
  • 12 cups water
  • 4 stalks celery, chopped
  • 6 to 7 large carrots (peeled and sliced)
  • 1 (10-ounce) package yellow rice
  • 1 (1-ounce) package ranch dressing mix
  • Salt
  • Ground black pepper
  • Alabama Firecrackers, to serve
Instructions
  1. In a stockpot, cover chicken with 12 cups water. Bring to a boil over medium-high heat; cook until tender. Remove chicken and reserve broth.
  2. Add celery and carrots to reserved broth in pot. Bring to a boil over medium-high heat and cook until almost tender. Add rice and ranch dressing mix, and cook about 20 minutes, adding more water if needed. Do not overcook your rice.
  3. Remove and discard bones from your chicken and chop the meat. Return chopped chicken to the soup. Add salt and pepper to your liking. Serve with Alabama Firecrackers.
