Garlic-Herb Butter Roast Beef

Makes 8 to 10 servings
Ingredients
  • 1 (5- to 5½-pound) beef top-sirloin roast
  • 1 cup unsalted butter, softened
  • 2 shallots, minced
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano
  • 2 teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper
  • 2 red onions, each quartered
  • 1 head garlic, halved
  • Garnish: fresh rosemary sprigs, fresh oregano
Instructions
  1. Remove beef from refrigerator and let sit at room temperature for at least 30 minutes before cooking.
  2. Preheat oven to 400°.
  3. In a medium bowl, stir together softened butter, shallot, garlic, parsley, thyme, rosemary, oregano, salt, black pepper, and red pepper. Rub half of butter mixture all over beef until evenly coated.
  4. Place beef in a large cast-iron Dutch oven or braiser. Arrange onion and garlic halves around beef.
  5. Bake until golden brown, 25 to 30 minutes. Decrease oven temperature to 350°.
  6. Spoon remaining butter mixture over beef. Bake until an instant-read thermometer inserted in center registers 125 to 130°, 45 minutes to 1 hour.
  7. Cover with foil and let rest for 15 minutes before slicing. Serve with roasted onions, garlic, and accumulated juices and butter, if desired. Garnish with rosemary and oregano, if desired.
