Garlic-Herb Butter Roast Beef
Makes 8 to 10 servings
Ingredients
- 1 (5- to 5½-pound) beef top-sirloin roast
- 1 cup unsalted butter, softened
- 2 shallots, minced
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1 teaspoon fresh thyme leaves
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh oregano
- 2 teaspoons kosher salt
- ½ teaspoon ground black pepper
- ¼ teaspoon crushed red pepper
- 2 red onions, each quartered
- 1 head garlic, halved
- Garnish: fresh rosemary sprigs, fresh oregano
Instructions
- Remove beef from refrigerator and let sit at room temperature for at least 30 minutes before cooking.
- Preheat oven to 400°.
- In a medium bowl, stir together softened butter, shallot, garlic, parsley, thyme, rosemary, oregano, salt, black pepper, and red pepper. Rub half of butter mixture all over beef until evenly coated.
- Place beef in a large cast-iron Dutch oven or braiser. Arrange onion and garlic halves around beef.
- Bake until golden brown, 25 to 30 minutes. Decrease oven temperature to 350°.
- Spoon remaining butter mixture over beef. Bake until an instant-read thermometer inserted in center registers 125 to 130°, 45 minutes to 1 hour.
- Cover with foil and let rest for 15 minutes before slicing. Serve with roasted onions, garlic, and accumulated juices and butter, if desired. Garnish with rosemary and oregano, if desired.
