Artichoke and Feta Flatbread

Ingredients
  1. 1 (8-ounce) package feta cheese,
  2. crumbled
  3. 2 teaspoons fresh lemon juice
  4. 2 teaspoons chopped fresh thyme
  5. 2 teaspoons chopped fresh oregano
  6. 2 teaspoons chopped fresh parsley
  7. 1 teaspoon olive oil
  8. 1 large egg
  9. 1 tablespoon water
  10. 1 (17.3-ounce) package frozen puff
  11. pastry sheets, thawed (2 sheets)
  12. 1 (14.5-ounce) can quartered
  13. artichoke hearts, drained
  14. 2 tablespoons sliced shallot Garnish: chopped fresh parsley
Instructions
  1. 1. In a small bowl, stir together feta, lemon juice, thyme, oregano, parsley, and oil.
  2. 2. Preheat oven to 400°. Line 2 rimmed baking sheets with parchment paper. In another small bowl, whisk together egg and water.
  3. 3. Unfold pastry sheets; place 1 pastry sheet on each prepared pan. Brush with egg mixture. Top with feta mixture, artichokes, and shallot, leaving a 1/2 inch border around edges.
  4. 4. Bake until golden brown, about 17 minutes. Let cool slightly before cutting. Garnish with parsley, if desired.
