
Artichoke and Feta Flatbread

Ingredients
- 1 (8-ounce) package feta cheese,
- crumbled
- 2 teaspoons fresh lemon juice
- 2 teaspoons chopped fresh thyme
- 2 teaspoons chopped fresh oregano
- 2 teaspoons chopped fresh parsley
- 1 teaspoon olive oil
- 1 large egg
- 1 tablespoon water
- 1 (17.3-ounce) package frozen puff
- pastry sheets, thawed (2 sheets)
- 1 (14.5-ounce) can quartered
- artichoke hearts, drained
- 2 tablespoons sliced shallot Garnish: chopped fresh parsley
Instructions
- 1. In a small bowl, stir together feta, lemon juice, thyme, oregano, parsley, and oil.
- 2. Preheat oven to 400°. Line 2 rimmed baking sheets with parchment paper. In another small bowl, whisk together egg and water.
- 3. Unfold pastry sheets; place 1 pastry sheet on each prepared pan. Brush with egg mixture. Top with feta mixture, artichokes, and shallot, leaving a 1/2 inch border around edges.
- 4. Bake until golden brown, about 17 minutes. Let cool slightly before cutting. Garnish with parsley, if desired.
