Southerners serve this Lowcountry dish on New Year’s Day to bring good luck. The peas in Classic Hoppin’ John represent pennies or coins. Sometimes, a coin is added to the pot or placed under a bowl on the table, and whoever finds it is said to have even more luck. Leftovers served the next day are called Skippin’ Jenny, and this show of frugality offers more hope of good luck to come.
