This Honey Peach Ice Cream Cake combines creamy ice cream, ripe peaches, and a drizzle of honey for a refreshing and indulgent summer treat.
Honey-Peach Ice Cream Cake
Makes 8 to 10 Servings
Ingredients
- 2 cups whole buttermilk
- 1 cup sugar
- ¼ cup honey
- 6 large egg yolks
- 2 tablespoons cornstarch
- 8 ounces mascarpone cheese
- 1 teaspoon vanilla extract
- 1 cup cold heavy whipping cream
- 1½ cups small-diced fresh peaches
- ¼ cup chopped toasted unsalted pistachios
- Garnish: sliced fresh peaches, toasted pistachios, honey
Instructions
- Line a 9x5-inch loaf pan with plastic wrap, letting excess extend over sides of pan. Freeze until ready to use.
- In a heavy-bottomed saucepan, combine buttermilk, sugar, honey, egg yolks, and cornstarch. Cook over medium-low heat, whisking constantly, until mixture comes to a gentle boil. Cook, stirring constantly, until thickened, mixture coats the back of a spoon, and an instant-read thermometer registers 170°, 2 to 3 minutes. Remove from heat, and strain through a fine-mesh sieve into a heatproof bowl. Stir in mascarpone and vanilla. Cover with plastic wrap, pressing wrap directly onto surface of custard to prevent a skin from forming. Let cool at room temperature for 30 minutes.
- In the bowl of a stand mixer fitted with the whisk attachment, beat cold cream at high speed until stiff peaks form. Fold whipped cream into cooled custard.
- Sprinkle half of diced peaches and half of chopped pistachios in bottom of prepared pan. Spoon half of custard mixture onto peach mixture. Top with remaining diced peaches and remaining chopped pistachios. Spoon remaining custard mixture on top. Cover with plastic wrap, and freeze for 8 hours or overnight.
- When ready to serve, let stand for 5 minutes. Invert onto a serving platter. Discard plastic wrap, and garnish with sliced peaches, pistachios, and honey, if desired.




can you use frozen peaches or another fruit instead of peaches? or a combination of fruits together?

Yes, you could use frozen peaches in this cake. We would not recommend garnishing with frozen fruit, as they will juice out much more.
You could use any stone fruit you would like in this cake, even a combination of stone fruits (peaches, plums, cherries, nectarines). Fruits like apples, pears, and oranges would not work well in this recipe. Thank you!
