Orange Focaccia
Orange Focaccia
 
Makes 1 (9-inch) loaf
Ingredients
  • 4 tablespoons Orange Olive Oil (recipe follows), divided
  • 1 (1-pound) loaf frozen bread dough*, thawed in refrigerator for 8 hours
  • 5 (¼-inch-thick) orange slices
  • Sparkling sugar, for topping
  • Vanilla-Cardamom Glaze (recipe follows)
Instructions
  1. Spread 2 tablespoons Orange Olive Oil in bottom and up sides of a 9-inch round cake pan. Place thawed dough in prepared pan, pressing to edges. Cover with plastic wrap, and let stand in a warm, draft-free place (75°) until slightly puffed, 2 to 2½ hours.
  2. Using your fingertips, dimple dough, pressing into dough without tearing through. Cover and let stand for 30 minutes.
  3. Preheat oven to 400°.
  4. Drizzle remaining 2 tablespoons Orange Olive Oil on top of dough. Re-dimple dough as needed. Top with orange slices, gently pressing into dough. Sprinkle sparkling sugar on top as desired.
  5. Bake until golden brown and an instant-read thermometer inserted in center registers 190°, about 20 minutes, covering with foil to prevent excess browning, if necessary. Let cool in pan for 10 minutes.
  6. Remove from pan, and drizzle Vanilla-Cardamom Glaze on top. Serve warm or at room temperature.
Notes
*We used Bridgford Ready-Dough.

 
Orange Olive Oil
 
Makes 1 cup
Ingredients
  • 1 cup olive oil
  • 1 large navel orange
Instructions
  1. In a small saucepan, place oil.
  2. Using a peeler, remove outside peel of orange, leaving white pith behind. Add peel to oil, reserving remaining fruit for another use. Heat over medium-low heat until mixture just begins to simmer. (Do not boil; the oil will turn bitter.) Reduce heat to low, and simmer for 5 minutes.
  3. Remove oil from heat, cover, and let stand for at least 2 hours or up to 3 hours. Discard peel. Refrigerate in an airtight container for up to 2 weeks.

 
Vanilla-Cardamom Glaze
 
Makes about 1 cup
Ingredients
  • 1 cup confectioners’ sugar
  • 1½ tablespoons fresh orange juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground cardamom
Instructions
  1. In a medium bowl, whisk together all ingredients. Use immediately.
