Tender and moist with a crunchy crust of bread crumbs and cheese, this Oven-Fried Catfish will impress even the pickiest of eaters.
Oven-Fried Catfish
Ingredients
- 3 tablespoons canola oil
- 2 tablespoons light mayonnaise
- 2 teaspoons Dijon mustard
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 4 (6-ounce) catfish fillets
- 3⁄4 cup panko (Japanese bread
- 1 tablespoon grated Parmesan cheese
- 1⁄4 teaspoon paprika
- 1⁄4 teaspoon onion powder
- 2 tablespoons unsalted butter,
- Lemon wedges, for serving
Instructions
- Preheat oven to 425°.
- Pour oil into a large rimmed baking sheet, swirling to coat. Place in oven until very hot, about 4 minutes.
- Meanwhile, in a small bowl, combine mayonnaise, mustard, salt, and pepper; spray 1 side of fish with cooking spray. Turn fish over; brush with mayonnaise mixture. In another small bowl, combine bread crumbs, cheese, paprika, and onion powder. Sprinkle over top of fish, pressing gently. Carefully place fillets on hot oil. Drizzle fish with butter.
- Bake until crumb topping is golden brown and fish flakes easily when tested with a fork, about 17 minutes. Serve with lemon wedges.




I made the cat fish in your recipe using new frying oil a Chef friend gave me. It’s refined high oleic sunflower oil with 83% monounsaturated fat (that’s the one doctors say is the good fat, same one as in olive oil). The dish came out amazing. Thanks.

Excellent recipe. I used pork rind crumbs to eliminate the carbs.
