Creamy and smoky with a kick from green chiles, this casserole will please a crowd.
Pulled Pork Enchilada Casserole
Yields: 6 servings
Ingredients
- 4 cups pulled smoked pork (about 1 pound)
- 3 cups shredded Monterey Jack cheese, divided
- 1 1⁄4 cups chicken broth, divided
- 1 (4.5-ounce) can chopped mild or hot green chiles, such as Hatch
- 1 teaspoon ground cumin
- 1 teaspoon garlic salt
- 12 (6-inch) corn tortillas
- 2 cups sour cream
- Garnish: sliced radish, chopped fresh cilantro, chopped green onion
Instructions
- Preheat oven to 350°.
- Spray a 13x9-inch baking dish with nonstick cooking spray. Set aside.
- In a medium bowl, stir together pork, 1 cup cheese, 1⁄4 cup broth, chiles, cumin, and garlic salt. Layer 6 tortillas in the bottom of prepared dish, overlapping tortillas. Spoon pork mixture over tortillas. Arrange remaining 6 tortillas over pork mixture.
- In a medium bowl, whisk together remaining 1 cup broth and sour cream until smooth. Pour over tortillas; sprinkle with remaining 2 cups cheese. Gently tap pan on counter twice to settle ingredients.
- Bake until bubbly and cheese melts, 20 to 25 minutes. Garnish with radish, cilantro, and green onion, if desired.




I made these last night with my leftover pork roast that I’d crock-potted in chicken broth several days ago. I forgot to add the cheese to the pork before I covered the tortillas, so I sprinkled the one cup on top of the shredded pork before adding the second layer of tortillas. I also left off the radishes, but did everything else as the recipe is written. OH MY GOSH!!! These are so awesome! My son loved it and said we have to add it to our permanent rotation. I brought the leftovers in to work and all seven of the women I share it with told me they were amazing. This is a real winner. 🙂
This casserole was terrible. The sour cream curdled and the texture was very mushy. I should’ve know when it called for 2c sour cream without any cream or flour that this would be off. It was extremely off. We struggled to eat one piece and threw the whole pan out. I would give this 0 starts if I could.
Hi Sharon! Sorry to hear it didn’t turn out for you. We’ve tested this recipe and never had this issue come up before. Are you making sure that the chicken broth and cream cheese are whisked together until completely smooth?
