Pumpkin Granola

This sweet and crunchy granola makes a great gift for loved ones, an on-the-go snack, or breakfast topping for a yummy start to the day.

Pumpkin Granola
 
Makes 6 cups
Ingredients
  • 3 cups old-fashioned oats
  • 1 cup chopped pecans
  • ¾ cup roasted and lightly salted pumpkin seeds
  • ½ cup dried cranberries
  • ⅓ cup firmly packed dark brown sugar
  • ⅓ cup sorghum syrup
  • ⅓ cup pumpkin purée
  • ¼ cup vegetable oil
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon kosher salt
  • ¾ cup white chocolate chips
Instructions
  1. Preheat oven to 250°. Line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, pecans, pumpkin seeds, and dried cranberries.
  3. In a medium bowl, whisk together brown sugar, sorghum, pumpkin purée, oil, cinnamon, and salt. Pour sugar mixture over oats mixture, stirring to combine. Spread granola mixture in an even layer on prepared pan.
  4. Bake until deep golden brown and fragrant, 45 minutes to 1 hour, stirring every 15 minutes. Let cool completely. Stir chocolate chips into cooled granola until evenly distributed. Store in an airtight container for up to 2 weeks.
