Slow Cooker Peach Cobbler

It’s hard to beat a sweet treat that you can quickly throw together after lunch and have ready to serve after dinner.

Slow Cooker Peach Cobbler
 
Makes 8 to 10 Servings
Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 large eggs, room temperature
  • 1 cup plus 2 tablespoons sugar, divided
  • ¼ cup unsalted butter, melted
  • 2 tablespoons buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 5 cups sliced peaches
  • 1 teaspoon cinnamon
  • Vanilla ice cream, to serve
Instructions
  1. Spray the bowl of a 6-quart slow cooker with baking spray with flour.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, whisk together eggs and 1 cup sugar until well combined. Stir in butter, buttermilk, and vanilla. Add flour mixture to egg mixture, stirring until combined. Pour half of batter into the slow cooker, about 1 cup.
  4. In a medium bowl, combine peaches, cinnamon, and remaining 2 tablespoons sugar. Spread peach mixture evenly over batter. Top with remaining batter.
  5. Cover and cook on high for 2 to 3 hours or until the peaches are soft and top is puffed and set, or cook on low for 4 to 5 hours, removing the lid of the cooker during the last 45 minutes. The center of the top crust should register 190° to 200° on a thermometer. Serve warm with vanilla ice cream, if desired.
