Spatchcock is just a fancy way to say “butterfly.” Here’s our super-Southern method for flattening your bird.
STEP 1
Using a sharp knife, make two cuts on either side of backbone to serve as guides.
STEP 2
Using clean, brand-new handheld garden clippers, cut on both sides to remove backbone. Reserve bone for stock, if desired.
STEP 3
Place turkey on work surface, breast side up. Using both hands or a heavy cast-iron skillet, forcefully press turkey to flatten. (We found that giving it a whack with the skillet worked best.)
STEP 4
Marinate and grill as directed.
