Try a taste of the caramelized frosting on this cake, and you’ll want to top just about any and every cake with it.
White Chocolate–Carrot Skillet Cake
Makes 1 (9-Inch) Cake
Ingredients
- ½ cup granulated sugar
- ¼ cup firmly packed light brown sugar
- 2 large eggs
- ⅓ cup whole milk
- ⅓ cup vegetable oil
- 2 teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon kosher salt
- 1 cup finely grated carrot
- 1 (15-ounce) can crushed pineapple, drained
- Caramelized White Chocolate Frosting (recipe follows)
- Garnish: toasted chopped walnuts
Caramelized White Chocolate Frosting
- 2 (4.4-ounce) bars white chocolate, coarsely chopped
- ½ cup unsalted butter, softened
- 2 cups confectioners’ sugar
- 2 tablespoons whole milk
Instructions
- Preheat oven to 350°. Spray a 9-inch cast-iron skillet with baking spray with flour.
- In a large bowl, whisk together granulated sugar, brown sugar, eggs, milk, oil, and vanilla until well combined.
- In a separate bowl, sift together flour, baking powder, cinnamon, nutmeg, and salt. Slowly add flour mixture to sugar mixture, stirring until fully combined. Fold in carrot and pineapple. Spread mixture into prepared skillet.
- Bake until a wooden pick inserted in center comes out clean, about 50 minutes. Let cool in pan for 10 minutes. Remove from pan, and let cool completely.
- Top with Caramelized White Chocolate Frosting. Garnish with walnuts, if desired.
Caramelized White Chocolate Frosting
- Preheat oven 225°. Place chocolate in an even layer on a rimmed baking sheet. Bake for 5 minutes; smooth with a spatula. (The chocolate will look grainy and clumped together.) Continue to bake in 4-minute intervals, stirring between each, until light golden brown, 12 to 15 minutes. (The chocolate will become quite lumpy but will smooth when stirred.)
- In the bowl of a stand mixer with the whisk attachment, beat butter until fluffy. Add chocolate, and beat until smooth. Add confectioners’ sugar and milk, beating until combined.
