Baked Grits and Greens

Ingredients
  1. 1⁄2 pound smoked sausage, sliced
  2. 1⁄4 inch thick
  3. 6 cups chopped lacinato kale, firmly packed
  4. 2 tablespoons chopped fresh chives
  5. 31⁄2 cups water
  6. 1 cup instant grits
  7. 3⁄4 teaspoon kosher salt
  8. 1⁄8 teaspoon ground black pepper
  9. 1 cup shredded extra-sharp white Cheddar cheese
  10. 1⁄2 cup heavy whipping cream
  11. 2 large eggs, lightly beaten
Instructions
  1. Preheat oven to 350°. Spray a 2-quart baking dish with nonstick cooking spray. Set aside.
  2. Heat a large nonstick skillet over medium-high heat. Add sausage to pan. Cook, stirring occasionally, until browned, approximately 4 minutes. Add kale. Cook, stirring occasionally, until kale has wilted, approximately 3 minutes. Stir in chives. Remove from heat, and set aside.
  3. In a medium saucepan, bring 31⁄2 cups water to a boil. Gradually stir in grits, salt, and pepper. Cook, stirring frequently, until thickened, approximately 5 minutes. Stir in cheese until smooth. Remove from heat. Whisking constantly, gradually add cream and eggs. Pour grits mixture into prepared dish. Stir in sausage and kale mixture.
  4. Bake until set, approximately 35 minutes.

  1. Grits and greens was (and will be cooked often) to die for! I just ate leftovers for breakfast. Night before last had it as main with a salad that included the leftover from the fresh kale! I could eat it again tonight if I had more. I rate this recipe as 5 star.

  2. I am from a small town in the South so we just threw together what we had never thought I’d see a recipe for this greens grit and sausage dish.
