Brown Sugar-Glazed Salmon
Makes 6 servings
Ingredients
- Brown Sugar Glaze (recipe follows)
- 6 (8-ounce) salmon fillets
- 2 tablespoons vegetable oil
- 1 (16-ounce) bag coleslaw mix
- 1 clove garlic, thinly sliced
- ½ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- Hot cooked rice, to serve
- Garnish: chopped fresh cilantro
Instructions
- Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.
- In a small bowl, reserve ⅓ cup Brown Sugar Glaze.
- On prepared pan, place salmon about 2 inches apart; brush reserved glaze over each fillet.
- Bake for 10 minutes. Turn salmon, and brush reserved glaze over each fillet; bake for 10 minutes more.
- In a large skillet, heat 2 tablespoons oil over medium-high heat. Add garlic, and cook, stirring constantly, for about 1 minute. Add slaw, and cook, stirring frequently, until lightly browned and tender, about 5 minutes. Serve salmon with slaw, rice, and remaining Brown Sugar Glaze. Garnish with cilantro, if desired.
Brown Sugar Glaze
Makes about 1 cup
Ingredients
- ½ cup molasses or cane syrup
- ¼ cup soy sauce
- 3 tablespoons firmly packed dark brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon kosher salt
- ¼ teaspoon crushed red pepper
Instructions
- In a large saucepan, combine all ingredients, and bring to a gentle boil over medium heat, stirring occasionally, until mixture coats the back of a spoon, 5 to 10 minutes.
Notes
Note: For an extra kick, substitute bourbon for the vinegar in the glaze.
