Sausage with Red Cabbage and Apples

Easy and oh so tasty, this simple supper will freshen up your weeknight repertoire.

Sausage with Red Cabbage and Apples
 
Makes 6 servings
Ingredients
  • 4 tablespoons vegetable oil, divided
  • 6 bratwurst sausages
  • 2 tablespoons unsalted butter
  • 2 medium unpeeled Honeycrisp apples, cored and cut into 6 wedges each
  • 1 cup sliced yellow onion
  • 8 cups thinly sliced red cabbage
  • ⅛ teaspoon kosher salt
  • 1 cup chicken stock
  • Buttered egg noodles, to serve
Instructions
  1. In a 12-inch cast-iron skillet with lid, heat 2 tablespoons oil over medium heat. Add sausage; cook, turning occasionally, until browned, about 5 minutes. Remove from skillet.
  2. Add butter to skillet. When butter melts, add apples, and cook, turning occasionally, until soft and slightly golden brown, about 5 minutes. Remove from skillet.
  3. Add onion to skillet, and cook until golden brown, about 7 minutes. Add remaining 2 tablespoons oil. Add cabbage and salt; cook until soft and slightly golden brown. Spread apples evenly over cabbage and onion mixture. Place sausages on top, and add chicken stock. Cover, and cook until a thermometer inserted in the center of sausage registers 160° and apples are tender, about 15 minutes. Serve warm with egg noodles.
