Grilled Chicken Cutlets with Apple Butter Barbecue Sauce

Grilled Chicken Cutlets with Apple Butter Barbecue Sauce
 
Makes 6 servings
Ingredients
  • 1 cup vegetable oil
  • ⅓ cup rosé or white balsamic vinegar
  • 4 cloves garlic, mashed
  • 1½ teaspoons kosher salt, divided
  • ½ teaspoon ground black pepper
  • 2 pounds chicken cutlets
  • Apple Butter Barbecue Sauce (recipe follows)
  • Garnish: thinly sliced green onions, chopped fresh cilantro
Instructions
  1. In a large resealable plastic bag, combine oil, vinegar, garlic, 1 teaspoon salt, and pepper. Add cutlets; seal bag and refrigerate for 30 minutes.
  2. Remove chicken and discard marinade. Sprinkle cutlets evenly with remaining ½ teaspoon salt. Let stand for 15 minutes.
  3. Heat a cast-iron grill pan over medium-high heat and lightly spray with cooking spray. Grill cutlets in batches until done, 3 to 4 minutes. Brush each cutlet evenly with Apple Butter Barbecue Sauce, and grill for 1 minute. Serve with remaining Apple Butter Barbecue Sauce. Garnish with green onion and cilantro, if desired.

 
Apple Butter Barbecue Sauce
 
Ingredients
  • ¾ cup apple butter
  • ¼ cup firmly packed light brown sugar
  • ¼ cup ketchup
  • ¼ cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons Dijon mustard
  • 1 teaspoon onion powder
  • ½ teaspoon garlic paste
  • ½ teaspoon kosher salt
  • ¼ teaspoon chipotle chile powder
  • ⅛ teaspoon ground black pepper
Instructions
  1. In a medium saucepan, combine all ingredients and bring to a boil over medium heat. Reduce heat to low; simmer, stirring occasionally, until thickened, 10 to 15 minutes. Refrigerate for up to 1 week.
