How to Make miniature Caramel Apples:
Spray a wire rack with nonstick cooking spray; place on a piece of wax paper. Holding lady apples by the stems, lightly dip bottoms in Brown Sugar Glaze twice, gently scraping excess glaze against edge of saucepan. Gently place apples, glazed side up, on prepared rack. Let stand until glaze is set, approximately 15 minutes. Wah-la! A beautiful and tasty topper for your bundt cake.

Ingredients
- 3 cups all-purpose flour
- 1 tablespoon apple pie spice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 11⁄2 cups unsalted butter, softened
- 13⁄4 cups sugar
- 3 large eggs
- 3 cups chopped apple, such as Granny Smith or Gala
- 2 teaspoons orange zest
- 1 tablespoon vanilla extract
- 1⁄2 cup chopped pecans
- Brown Sugar Glaze (recipe follows)
- Garnish: Miniature Caramel Apples (see how-to above)
Instructions
- Preheat oven to 325°. Spray a 15-cup Bundt pan with nonstick baking spray with flour. Set aside.
- In a large bowl, whisk together flour, apple pie spice, salt, baking powder, and baking soda. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating until combined.
- With mixer on low speed, gradually add flour mixture, beating until combined. Add apple, zest, and vanilla, beating until combined. Fold in pecans. (Batter will be thick). Spoon into prepared pan, spreading evenly.
- Bake until a wooden pick inserted near center comes out clean, approximately 1 hour and 5 minutes. Let cool in pan 15 minutes. Remove from pan, and let cool completely on a wire rack.
- Prepare Brown Sugar Glaze and Miniature Caramel Apples. Place a piece of wax paper under rack; drizzle cake with remaining Brown Sugar Glaze. Let stand until glaze is set, approximately 30 minutes. Garnish with Miniature Caramel Apples, if desired.

- 1⁄2 cup firmly packed dark brown sugar
- 3 tablespoons apple cider
- 2 tablespoons unsalted butter
- 1 tablespoon dark corn syrup
- 1⁄8 teaspoon salt
- 1 cup confectioners’ sugar, sifted
Instructions
- In a small saucepan, bring brown sugar, cider, butter, corn syrup, and salt to a boil over medium-high heat. Reduce heat to medium-low; cook 1 minute. Remove from heat. Add confectioners’ sugar; beat at low speed with an electric mixer 1 minute. Let cool 3 minutes before using.
