Bacon and Cheese Quick Bread
 
Makes 1 (8½ x 4½-Inch) Loaf
Ingredients
  • 2¼ cups self-rising flour
  • ¾ cup shredded sharp Cheddar cheese
  • ¾ cup crumbled cooked bacon
  • 3 tablespoons sugar
  • 1 cup whole buttermilk
  • ¼ cup vegetable oil
  • 2 large eggs
  • 3 tablespoons old-fashioned oats
Instructions
  1. Preheat oven to 375°.
  2. Line an 8½x4½-inch cast-iron loaf pan with parchment paper, letting ends extend over sides of pan.
  3. In a large bowl, combine flour, cheese, bacon, and sugar.
  4. In a medium bowl, whisk together buttermilk, oil, and eggs. Pour over flour mixture; stir just until combined. Spoon into prepared pan. Sprinkle with oats.
  5. Bake until a wooden pick inserted in center comes out clean, about 35 minutes. Let cool in pan for 5 minutes. Using excess parchment as handles, remove from pan; let cool on a wire rack for 20 minutes.
