Basmati Rice Pudding

Ingredients
- 4 cups whole milk
- 2⁄3 cup basmati rice
- 1⁄2 cup coconut milk
- 1⁄3 cup sugar
- 1⁄4 teaspoon ground cardamom
- 1⁄4 teaspoon orange zest
- 1⁄8 teaspoon salt
- 1 tablespoon butter
- Garnish: chopped roasted salted pistachios and orange zest
Instructions
- In a large saucepan, combine milk, rice, coconut milk, sugar, cardamom, orange zest, and salt. Bring to a boil over medium-high heat, stirring frequently (see note). Reduce heat; simmer over medium-low heat, stirring occasionally, until rice is tender and mixture is thick and creamy, approximately 50 minutes. Stir in butter.
- Divide pudding among four small serving dishes. Garnish with pistachios and orange zest, if desired. Serve warm.
Note
- While rice mixture is coming to a boil, keep an eye on it because it can boil over very quickly.

Hi, Stir in the butter at the end of step 2 after the rice is cooked.
This recipe is amazing! The flavour combo is perfect. I made it with an unsweetened soy milk and it turned out great. 🙂
