Basmati Rice Pudding

A delicious dessert with an exotic flare: Basmati Rice Pudding.

Ingredients
  1. 4 cups whole milk
  2. 2⁄3 cup basmati rice
  3. 1⁄2 cup coconut milk
  4. 1⁄3 cup sugar
  5. 1⁄4 teaspoon ground cardamom
  6. 1⁄4 teaspoon orange zest
  7. 1⁄8 teaspoon salt
  8. 1 tablespoon butter
  9. Garnish: chopped roasted salted pistachios and orange zest
Instructions
  1. In a large saucepan, combine milk, rice, coconut milk, sugar, cardamom, orange zest, and salt. Bring to a boil over medium-high heat, stirring frequently (see note). Reduce heat; simmer over medium-low heat, stirring occasionally, until rice is tender and mixture is thick and creamy, approximately 50 minutes. Stir in butter.
  2. Divide pudding among four small serving dishes. Garnish with pistachios and orange zest, if desired. Serve warm.
Note
  1. While rice mixture is coming to a boil, keep an eye on it because it can boil over very quickly.
