Broccoli-Sesame Salad
Broccoli-Sesame Salad
 
Makes 6 to 8 servings
Ingredients
  • 6 cups chopped fresh broccoli florets
  • 1 large carrot, peeled and thinly sliced diagonally
  • ¾ cup matchstick-cut radishes
  • 2 tablespoons sliced green onion
  • ¼ cup olive oil
  • 1 tablespoon minced garlic
  • ¼ cup red wine vinegar
  • 1 teaspoon lightly packed orange zest
  • 2 tablespoons fresh orange juice
  • 4 teaspoons toasted sesame oil
  • 1 teaspoon ground cumin
  • 1 teaspoon toasted sesame seeds
  • 1½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper
  • Garnish: sliced green onion, toasted sesame seeds
Instructions
  1. In a medium bowl, combine broccoli, carrot, radish, and green onion.
  2. In a small saucepan, heat olive oil over medium heat. Add garlic; cook, stirring frequently, until lightly browned, 1 to 2 minutes. Remove from heat. Stir in vinegar, orange zest and juice, sesame oil, cumin, sesame seeds, salt, and peppers. Pour over broccoli mixture, tossing to coat. Cover and refrigerate for 1 hour or up to 4 hours. Stir before serving. Garnish with green onion and sesame seeds, if desired.
