Broccoli-Sesame Salad
Makes 6 to 8 servings
Ingredients
- 6 cups chopped fresh broccoli florets
- 1 large carrot, peeled and thinly sliced diagonally
- ¾ cup matchstick-cut radishes
- 2 tablespoons sliced green onion
- ¼ cup olive oil
- 1 tablespoon minced garlic
- ¼ cup red wine vinegar
- 1 teaspoon lightly packed orange zest
- 2 tablespoons fresh orange juice
- 4 teaspoons toasted sesame oil
- 1 teaspoon ground cumin
- 1 teaspoon toasted sesame seeds
- 1½ teaspoons kosher salt
- ½ teaspoon ground black pepper
- ¼ teaspoon crushed red pepper
- Garnish: sliced green onion, toasted sesame seeds
Instructions
- In a medium bowl, combine broccoli, carrot, radish, and green onion.
- In a small saucepan, heat olive oil over medium heat. Add garlic; cook, stirring frequently, until lightly browned, 1 to 2 minutes. Remove from heat. Stir in vinegar, orange zest and juice, sesame oil, cumin, sesame seeds, salt, and peppers. Pour over broccoli mixture, tossing to coat. Cover and refrigerate for 1 hour or up to 4 hours. Stir before serving. Garnish with green onion and sesame seeds, if desired.
