Creamy Shrimp Pasta Salad
Makes 6 to 8 servings
Ingredients
- ½ cup mayonnaise
- ¼ cup chopped fresh dill
- ¼ cup chopped fresh basil
- ¼ cup crème fraîche
- 1 teaspoon lightly packed lemon zest
- ¼ cup fresh lemon juice
- 2 teaspoons kosher salt
- 1½ pounds peeled and deveined cooked jumbo shrimp
- 1 (16-ounce) package bow tie pasta, cooked according to package instructions
- 2 cups thinly sliced zucchini
- 1 cup thinly sliced yellow squash
- 1 (6-ounce) package crumbled feta cheese
- Garnish: fresh dill, fresh basil
Instructions
- In a large bowl, whisk together mayonnaise, dill, basil, crème fraîche, lemon zest and juice, and salt. Fold in shrimp, pasta, zucchini, and squash. Top with feta. Garnish with dill and basil, if desired.
