This devilishly delicious biscuit pairing would be a lovely addition to any lunch.
Deviled Ham
Makes 6 to 8 servings
Ingredients
- ¼ cup mayonnaise
- 2 ounces cream cheese, room temperature
- 2 tablespoons Dijon mustard
- 2 teaspoons hot sauce
- 1 tablespoon Worcestershire sauce
- 1½ cups finely chopped cooked ham
- ½ cup finely chopped country ham
- 1 (4-ounce) jar diced pimientos, drained well
- ⅓ cup finely chopped celery
- ¼ cup finely chopped white onion
- 3 tablespoons sliced fresh chives
- Drop Biscuits (recipe follows)
- Garnish: fresh celery leaves
Instructions
- In a medium bowl, stir together mayonnaise, cream cheese, Dijon mustard, hot sauce, and Worcestershire, stirring until smooth.
- Add ham, country ham, pimientos, celery, onion, and chives; stir to combine. Serve with Drop Biscuits. Garnish with celery leaves, if desired.
Drop Biscuits
Makes 12
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons sugar
- 1½ teaspoons kosher salt
- ½ teaspoon baking soda
- 1 cup cold whole buttermilk
- ¼ cup plus 2 tablespoons unsalted butter, melted and divided
- ¼ cup sliced fresh chives
Instructions
- Preheat oven to 450°. Line a baking sheet with parchment paper.
- In a large bowl, stir together flour, baking powder, sugar, salt, and baking soda. Add buttermilk, ¼ cup melted butter, and chives to flour mixture, stirring until just combined.
- Drop by 3 tablespoonfuls onto prepared pan, 1 inch apart.
- Bake until golden brown, 10 to 12 minutes. Brush with remaining 2 tablespoons melted butter.
- Serve warm with Deviled Ham.
