Deviled Ham and Drop Biscuits

This devilishly delicious biscuit pairing would be a lovely addition to any lunch.

Deviled Ham
 
Makes 6 to 8 servings
Ingredients
  • ¼ cup mayonnaise
  • 2 ounces cream cheese, room temperature
  • 2 tablespoons Dijon mustard
  • 2 teaspoons hot sauce
  • 1 tablespoon Worcestershire sauce
  • 1½ cups finely chopped cooked ham
  • ½ cup finely chopped country ham
  • 1 (4-ounce) jar diced pimientos, drained well
  • ⅓ cup finely chopped celery
  • ¼ cup finely chopped white onion
  • 3 tablespoons sliced fresh chives
  • Drop Biscuits (recipe follows)
  • Garnish: fresh celery leaves
Instructions
  1. In a medium bowl, stir together mayonnaise, cream cheese, Dijon mustard, hot sauce, and Worcestershire, stirring until smooth.
  2. Add ham, country ham, pimientos, celery, onion, and chives; stir to combine. Serve with Drop Biscuits. Garnish with celery leaves, if desired.

 
Drop Biscuits
 
Makes 12
Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1½ teaspoons kosher salt
  • ½ teaspoon baking soda
  • 1 cup cold whole buttermilk
  • ¼ cup plus 2 tablespoons unsalted butter, melted and divided
  • ¼ cup sliced fresh chives
Instructions
  1. Preheat oven to 450°. Line a baking sheet with parchment paper.
  2. In a large bowl, stir together flour, baking powder, sugar, salt, and baking soda. Add buttermilk, ¼ cup melted butter, and chives to flour mixture, stirring until just combined.
  3. Drop by 3 tablespoonfuls onto prepared pan, 1 inch apart.
  4. Bake until golden brown, 10 to 12 minutes. Brush with remaining 2 tablespoons melted butter.
  5. Serve warm with Deviled Ham.
