Grilled Chicken Cutlets with Apple Butter Barbecue Sauce
Makes 6 servings
Ingredients
- 1 cup vegetable oil
- ⅓ cup rosé or white balsamic vinegar
- 4 cloves garlic, mashed
- 1½ teaspoons kosher salt, divided
- ½ teaspoon ground black pepper
- 2 pounds chicken cutlets
- Apple Butter Barbecue Sauce (recipe follows)
- Garnish: thinly sliced green onions, chopped fresh cilantro
Instructions
- In a large resealable plastic bag, combine oil, vinegar, garlic, 1 teaspoon salt, and pepper. Add cutlets; seal bag and refrigerate for 30 minutes.
- Remove chicken and discard marinade. Sprinkle cutlets evenly with remaining ½ teaspoon salt. Let stand for 15 minutes.
- Heat a cast-iron grill pan over medium-high heat and lightly spray with cooking spray. Grill cutlets in batches until done, 3 to 4 minutes. Brush each cutlet evenly with Apple Butter Barbecue Sauce, and grill for 1 minute. Serve with remaining Apple Butter Barbecue Sauce. Garnish with green onion and cilantro, if desired.
Apple Butter Barbecue Sauce
Ingredients
- ¾ cup apple butter
- ¼ cup firmly packed light brown sugar
- ¼ cup ketchup
- ¼ cup apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 2 tablespoons Dijon mustard
- 1 teaspoon onion powder
- ½ teaspoon garlic paste
- ½ teaspoon kosher salt
- ¼ teaspoon chipotle chile powder
- ⅛ teaspoon ground black pepper
Instructions
- In a medium saucepan, combine all ingredients and bring to a boil over medium heat. Reduce heat to low; simmer, stirring occasionally, until thickened, 10 to 15 minutes. Refrigerate for up to 1 week.
