Sugared Cinnamon-Coffee Pecans

Yield: approximately 6 cups
Ingredients
- 2 tablespoons instant coffee powder
- 1 tablespoon water
- 2 large egg whites
- 1 cup sugar
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 5 cups pecan halves
Instructions
- Preheat oven to 300°. Spray a rimmed baking sheet with nonstick cooking spray. Set aside.
- In a large bowl, combine coffee and 1 tablespoon water. Add egg whites, whisking until foamy, approximately 1 minute.
- Add sugar, salt, cinnamon, and pecans, stirring to combine. Spread pecan mixture in an even layer on prepared pan.
- Bake, stirring occasionally, until almost dry, approximately 45 minutes. Let cool completely. (Pecans will continue to dry as they cool.) Store in an airtight container up to 1 month.
