Tomato Pudding

The acidity and sweetness of this oft-overlooked Southern casserole pairs perfectly with fried chicken and other hearty, savory mains.

Tomato Pudding
 
Makes 6 to 8 servings
Ingredients
  • 1 (28-ounce) can whole tomatoes
  • ½ cup firmly packed light brown sugar
  • ¼ cup unsalted butter, melted
  • 1 tablespoon kosher salt
  • 1 teaspoon hot sauce
  • ¼ teaspoon ground black pepper
  • ½ teaspoon ground mustard
  • 5 slices white bread, cut into cubes
Instructions
  1. Preheat oven to 375°. Lightly spray a 2-quart baking dish with cooking spray.
  2. In a large bowl, combine tomatoes, brown sugar, melted butter, salt, hot sauce, pepper, and ground mustard.
  3. Add bread, and stir to combine. Transfer to prepared baking dish. Bake until bubbly and golden brown, 30 to 40 minutes.
