Brenda Gantt’s Neighbor Soup is a flavorful way to provide for the needy, cheer up your neighbor, or welcome someone new to the neighborhood.
Brenda Gantt's Neighbor Soup
Makes about 8 servings
Ingredients
- 1 whole chicken
- 12 cups water
- 4 stalks celery, chopped
- 6 to 7 large carrots (peeled and sliced)
- 1 (10-ounce) package yellow rice
- 1 (1-ounce) package ranch dressing mix
- Salt
- Ground black pepper
- Alabama Firecrackers, to serve
Instructions
- In a stockpot, cover chicken with 12 cups water. Bring to a boil over medium-high heat; cook until tender. Remove chicken and reserve broth.
- Add celery and carrots to reserved broth in pot. Bring to a boil over medium-high heat and cook until almost tender. Add rice and ranch dressing mix, and cook about 20 minutes, adding more water if needed. Do not overcook your rice.
- Remove and discard bones from your chicken and chop the meat. Return chopped chicken to the soup. Add salt and pepper to your liking. Serve with Alabama Firecrackers.
