Interested in starting your own collection? Mary advises beginning with research and a #8 skillet. After you get familiar with the different brands, choose a manufacturer as a focus and collect from there. There are two large cast-iron groups that include many avid collectors: The Griswold and Cast Iron Cookware Association and the Wagner and Griswold Society. These are great places to learn more about cast iron and meet others in the collecting community.
“My mom keeps asking me what happens when there’s no more cast iron to be had,” Mary says. “But I haven’t seen a deficiency yet—I think there’s a lot more out there.” Here in the South, we’re happy to hear it. We’ve got a lot more cornbread to make.
