Ingredients
  1. 3 large eggs, at room temperature
  2. ½ cup whole milk, at room temperature
  3. 1 teaspoon vanilla extract
  4. 1 teaspoon red food coloring
  5. ⅓ cup all-purpose flour
  6. 2 tablespoons sugar
  7. 2 tablespoons unsweetened cocoa powder
  8. ¼ teaspoon kosher salt
  9. 2 tablespoons unsalted butter, softened
  10. Garnish: chocolate syrup
  11. Cream Cheese Butter (recipe follows)
Instructions
  1. Preheat oven to 425°. Place a 
10-inch cast-iron skillet in oven 
to preheat.
  2. In a large bowl, whisk together eggs, milk, vanilla, food coloring, flour, sugar, cocoa, and salt for 30 seconds.
  3. Carefully remove hot skillet from oven. Add butter to skillet; let melt. Pour batter into hot skillet.
  4. Bake until puffy, 10 to 12 minutes. Garnish with chocolate syrup, 
if desired. Serve immediately, 
with cream cheese butter.

  2. 3 tablespoons softened unsalted butter
  3. ½ cup confectioners' sugar
Instructions
  1. In a medium bowl, stir together 
4 ounces softened cream cheese, 3 tablespoons softened unsalted butter, and ½ cup confectioners’ sugar until smooth.
