Green Onion Drop Biscuits with Shrimp and Tomato Gravy
Makes 6 to 8 servings
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons kosher salt
- 1 teaspoon sugar
- ½ teaspoon baking soda
- 8 tablespoons unsalted butter, melted and divided
- 1½ cups sour cream
- 1 cup sliced green onion
- ½ teaspoon Creole seasoning
- Shrimp and Tomato Gravy (recipe follows)
- Garnish: sliced green onion
Instructions
- Preheat oven to 400°. Line a rimmed baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, sugar, and baking soda. Add 6 tablespoons melted butter in a slow, steady stream, whisking constantly, until mixture resembles coarse crumbs. Stir in green onion and sour cream until a shaggy dough forms. Spoon 8 (½-cup) spoonfuls of batter 1½ inches apart onto prepared pan.
- Bake until golden brown, 12 to 15 minutes.
- In a small bowl, stir together Creole seasoning and remaining 2 tablespoons melted butter, and brush on top of biscuits. Serve with Shrimp and Tomato Gravy, and garnish with green onion, if desired.
Shrimp and Tomato Gravy
Makes 2 cups
Ingredients
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 pound peeled and deveined large fresh shrimp
- 1 cup finely chopped yellow onion
- ¼ cup chopped green onion
- 2 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 1½ tablespoons all-purpose flour
- 1 (15-ounce) can crushed tomatoes
- ½ cup dry white wine
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Creole seasoning
- ¼ teaspoon crushed red pepper
Instructions
- In a large skillet, heat oil over medium-high heat.
- Sprinkle salt all over shrimp. Add to skillet in a single layer, and cook until golden brown, about 1½ minutes per side. Remove from skillet.
- Reduce heat to medium. Add yellow onion, green onion, butter, and garlic to skillet, and cook, stirring frequently, until vegetables are lightly browned and softened, 3 to 5 minutes. Sprinkle flour on top; cook, stirring frequently, until lightly toasted, 1 to 2 minutes. Stir in tomatoes, wine, Worcestershire, Creole seasoning, and red pepper. Cook, stirring occasionally, until thickened and bubbly, 7 to 10 minutes. Return shrimp to skillet, and cook, stirring occasionally, until heated through, 2 to 3 minutes.
