Savory Shepherd’s Pie Casserole

A gift from our British brethren, this hearty casserole is a great way to transform leftover sweet potatoes into a company-worthy supper.

Savory Shepherd's Pie Casserole
 
Makes 6 to 8 servings
Ingredients
  • 1 pound ground sirloin
  • 1 pound ground pork
  • 2 cups pearl onions
  • 1 cup diced carrot
  • 1 cup English peas
  • 1 (15-ounce) can crushed tomatoes
  • ½ cup beef broth
  • 6 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons kosher salt
  • 2 teaspoons dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground black pepper
  • 4 large sweet potatoes, peeled, cooked, and mashed
  • ⅓ cup heavy whipping cream
Instructions
  1. Preheat oven to 350°. Spray a 2- to 3-quart baking dish with cooking spray.
  2. In a large skillet, cook beef and pork over medium-high heat until browned and crumbly; drain. Add onions, carrot, peas, tomatoes, broth, garlic, tomato paste, vinegar, salt, thyme, basil, paprika, and pepper; bring to a simmer. Reduce heat to low, and simmer for 10 minutes.
  3. Spoon mixture into prepared dish.
  4. In a large bowl, beat mashed sweet potatoes and cream with a mixer at medium speed until combined. Spoon sweet potato mixture on top of meat mixture.
  5. Bake for 30 minutes. Increase oven temperature to broil. Broil for 5 minutes.

Traditional Shepherd’s Pie is hearty and comforting, but a little plain-jane. Our upgrade adds layers of flavor with ground pork, tangy balsamic vinegar, and smoked paprika. The velvety sweet potato topping gets a quick toasting in the oven, adding a nice crunch.

Using a combination of ground meats is the secret to the superb texture and flavor of this casserole. For a spicy kick, substitute a pound of your favorite ground sausage for the ground pork.
