Served with crispy sweet potato chips, this stacked sandwich is the perfect balance of bold flavors and hearty textures—ideal for a satisfying lunch or a casual Southern-style gathering.
Southern Club Sandwiches
Yield: 6 sandwiches
Ingredients
- 1 cup plus 2 tablespoons Tomato Chutney Aïoli (recipe follows)
- 18 slices whole-grain bread
- 1 head green-leaf lettuce
- 18 slices deli-sliced Virginia ham
- 12 slices deli-sliced Havarti cheese
- 12 slices applewood-smoked bacon, cooked
- Sweet-potato chips
Instructions
- Spread approximately 1½ tablespoons aïoli on each of 6 slices whole-grain bread. Layer each with lettuce and 3 slices ham.
- Top each sandwich with another bread slice. Spread approximately 1½ tablespoons aïoli on top of each bread slice. Layer with 2 slices cheese and 2 slices bacon. Top with remaining 6 slices bread.
- Cut sandwiches into quarters. Place a wooden pick in the middle of each sandwich quarter. Serve with sweet-potato chips, if desired.
Tomato Chutney Aïoli
Yield: approximately 3 cups
Ingredients
- 1 (14.5-ounce) can diced tomatoes, drained
- ¼ cup plus 2 tablespoons firmly packed brown sugar
- ¼ cup apple cider vinegar
- 1 tablespoon chopped shallot
- 2 teaspoons ground ginger
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- ½ teaspoon chopped garlic
- ⅛ teaspoon ground red pepper
- 1 cup mayonnaise
Instructions
- In a medium heavy saucepan, combine tomatoes, brown sugar, vinegar, shallot, ginger, salt, pepper, garlic, and red pepper. Bring mixture to a boil over medium-high heat. Reduce heat, and simmer, uncovered, stirring often, until thick, approximately 30 minutes. Let cool completely. Refrigerate, covered, for 2 hours.
- Add mayonnaise, stirring to combine. Store covered in refrigerator for up to 5 days.
