Green Goddess Cobb Salad
 
Makes 4 to 6 servings
Ingredients
  •  2 heads romaine hearts, chopped
  • 1 (4-ounce) bag baby arugula
  • 4 hard-cooked eggs, peeled and quartered
  • 1 cup halved grape tomatoes
  • 1 cup crumbled blue cheese
  • 1 cup sliced English cucumber
  • 1 cup sliced green onion
  • 1 cup crumbled cooked bacon
  • Green Goddess Dressing (recipe follows)
Instructions
  1. In a large serving bowl, combine romaine and arugula. Top with eggs, tomatoes, blue cheese, cucumber, green onion, and bacon. Serve with Green Goddess Dressing.

Green Goddess Dressing
 
Makes 2 cups
Ingredients
  • ¾ cup sour cream
  • ¾ cup mayonnaise
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped green onion
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic
  • 1 teaspoon kosher salt
Instructions
  1. In the container of a blender, process all ingredients until smooth. Refrigerate in an airtight container until ready to use or for up to 3 days.
