Our Green Goddess Cobb Salad takes the classic up a notch with a creamy herb dressing. It’s a refreshing salad perfect for a light summer lunch.
Green Goddess Cobb Salad
Makes 4 to 6 servings
Ingredients
- 2 heads romaine hearts, chopped
- 1 (4-ounce) bag baby arugula
- 4 hard-cooked eggs, peeled and quartered
- 1 cup halved grape tomatoes
- 1 cup crumbled blue cheese
- 1 cup sliced English cucumber
- 1 cup sliced green onion
- 1 cup crumbled cooked bacon
- Green Goddess Dressing (recipe follows)
Instructions
- In a large serving bowl, combine romaine and arugula. Top with eggs, tomatoes, blue cheese, cucumber, green onion, and bacon. Serve with Green Goddess Dressing.
Green Goddess Dressing
Makes 2 cups
Ingredients
- ¾ cup sour cream
- ¾ cup mayonnaise
- ¼ cup chopped fresh parsley
- ¼ cup chopped green onion
- 2 tablespoons chopped fresh dill
- 2 tablespoons fresh lemon juice
- 1 small clove garlic
- 1 teaspoon kosher salt
Instructions
- In the container of a blender, process all ingredients until smooth. Refrigerate in an airtight container until ready to use or for up to 3 days.
