Chili Cheese Sweet Potato Fries

Homemade fries take this recipe from good to great, but if you prefer, you can make frozen sweet potato fries for your base when you whip up these Chili Cheese Sweet Potato Fries. 

Chili Cheese Sweet Potato Fries
 
Makes 4 to 6 servings
Ingredients
  • 1 (12-ounce) can cola
  • 1 pound ground beef
  • ½ cup chopped yellow onion
  • 3 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • ½ cup chili sauce
  • 1 cup beef broth
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Sweet Potato Fries (recipe follows)
  • Sliced green onions and shredded sharp Cheddar cheese, to serve
Instructions
  1. In a medium saucepan, add cola, and cook over medium-high heat, stirring occasionally, until reduced by half, about 10 minutes. Remove from heat.
  2. In a large skillet, add beef and onion; cook over medium heat, stirring occasionally, until beef is browned and onions are tender, 8 to 10 minutes.
  3. Add tomato paste and chili powder; cook for 2 minutes more. Stir in cola, Worcestershire, mustard, chili sauce, broth, salt, and pepper; cook over medium-low heat, stirring occasionally, until mixture thickens, about 20 minutes. Serve over Sweet Potato Fries with green onions and cheese, if desired.

Sweet Potato Fries
 
Makes 4 to 6 servings
Ingredients
  • 2 pounds small sweet potatoes, peeled and cut into ½-inch fries
  • Vegetable cooking oil, for frying
  • Kosher salt, to taste
Instructions
  1. Line a rimmed baking sheet with paper towels. Place a wire rack over pan.
  2. In a large bowl, cover cut potatoes with cold water. Let soak for at least 30 minutes. Remove potatoes from water; drain and pat dry.
  3. In a large Dutch oven, pour oil to a depth of 3 inches, and heat over medium heat until a deep-fry thermometer registers 375°.
  4. Working in batches, fry potatoes until browned and crisp, 3 to 5 minutes. Remove from oil, and let drain on paper towels. Sprinkle with salt, to taste.
