Our Grits Casserole is whipped up with crème fraîche and smoked Gouda cheese for a creamy, smoky finish that is sure to satisfy. This classic Southern side gets the total spa treatment.
Grits Casserole
Makes 4 to 6 servings
Ingredients
- 2½ cups water
- ⅔ cup white grits
- 2 teaspoons kosher salt
- 2 large eggs, separated
- 1 (5-ounce) container crème fraîche
- 2 cups shredded smoked Gouda cheese
Instructions
- Preheat oven to 350°. Lightly spray a 1-quart baking dish with cooking spray.
- In a medium saucepan, combine 2½ cups water, grits, and salt. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer until tender and thickened, about 15 minutes. Transfer to a large bowl, and let cool for 5 minutes. Whisk in egg yolks and crème fraîche and cheese until smooth.
- In the bowl of a stand mixer fitted with the whisk attachment, beat egg whites at medium-high speed until stiff peaks form. Fold into grits in two additions until no streaks remain. Transfer to prepared baking dish.
- Bake until golden brown, 35 to 40 minutes. Let stand for 5 minutes before serving.
